Buttermilk Biscuit Panzanella Salad
This panzanella salad is Tuscany with a southern flare. This versatile salad can use any number of ingredients so long as biscuits are included!
Ingredients
- 4 Mary B’s® Buttermilk Biscuits, cooked according to package
- 1 English Cucumber, diced
- 2 Peaches, diced large
- ½ Red Onion, finely chopped
- 2 Bunches of Basil, roughly chopped
- 1 Pkg of Feta Cheese
- Lime Juice
- Olive Oil
- Salt and Pepper
Directions
1. Cut prepared biscuits into 6 pieces each.
2. Combine cucumber, peaches, red onion, basil, and feta in a bowl.
3. Add biscuit pieces.
4. Salt and pepper to taste.
5. Dress with olive oil and lime juice. Toss until ingredients are thoroughly combined. Serve.
